9/10/2023 0 Comments Paleo blueberry tart![]() ![]() Since peaches are naturally sweet, we don’t need to use a lot of coconut sugar in this recipe, but a little bit helps make the rhubarb taste sweeter. This means that coconut sugar will not spike your blood sugar in the way that white sugar and other refined sweeteners do. The biggest reason that we love coconut sugar is because of its low glycemic index, that comes in at 35, as opposed to the high glycemic index of white sugar at 68. Since coconut sugar is made from dehydrated coconut sap, it also contains calcium, magnesium, potassium (400 times more than regular sugar), zinc and iron. This means it contains vitamins C, B1, B2, B3, and B6. Coconut sugar, one of our favorite sweeteners to use in baking, is a healthy alternative to white sugar since it’s unrefined. Besides all of the nutritional benefits of rhubarb, it adds a delicious, tart flavour to this galette.īoth the crust and filling are sweetened very lightly with coconut sugar. Most importantly, rhubarb also contains a pigment called parietin which studies have shown to potentially aid in fighting cancer and research is being done to see if parietin can effectively be used as a cancer drug. Its fiber content supports digestion and is a great plant food to include in your diet to help make sure that waste is being removed properly from the body. Rhubarb also is a good source of the antioxidant vitamin A, which is an important nutrient for skin health as well as contains vitamin C and lutein which are both needed for healthy eyesight. Rhubarb is an excellent source of fiber, calcium, iron, vitamin K (which helps support strong bones) and manganese. You can eat this for dessert or even as a snack or for breakfast, since it’s packed with nutrients and low-glycemic. Making a galette is easier than making pie, especially if you like the rustic appearance of dough folded over juicy, baked fruit. The crust is gluten free and filled with peaches, blueberries, and fresh rhubarb from the market. Maybe with a side bowl of berries, too.This time of year we absolutely love using local, in season produce and have combined some of our favorites into this grain free, paleo galette recipe. This Mother's Day I am excited to join the ranks of all the amazing mom's out there! While 9 week old Sawyer probably won't be bringing me breakfast in bed quite yet, I am looking forward to lots and lots of snuggles in bed. But it always always included some form of berries and cream. Which was really dessert in bed and usually involved some sort of puff pastry and her still pretending to be asleep when we brought it in. Partly because every year growing up we would make my mom breakfast in bed. Partly because it's right around the corner. These sweet No Bake Triple Berry Tarts remind me of Mother's Day. Then pour it into the crusts, pop them into the fridge, pat yourself on the back, and DONE. Throw some thawed frozen berries, some honey, some coconut cream and melted cacao butter into the blender and let it become smooth and silky. ![]() After eating a mountain of crumbled tart pieces, I can safely say "go with the tart pan," with a fair amount of certainty. Which, one key tip here: You will want to use tart pans that have removable bottoms. Then we smush our perfectly processed crust into tart pans. Did i mention this was a TWO INGREDIENT crust? Like as easy as wizzing the crust up in a food processor until it is the consistency of small pebbles and holds together when squished. ![]() ![]() And their ability to satisfy the hungriest spring sweet tooth.
